Low spoons day, healthy food

I have recently been very busy and having low spoons day with my chronic conditions. I still want to eat something healthy but it needs to be easy. I have been getting "salad kits" where all I have to do is open up the bag, which is actually easy for me to open, pour the greens into a bowl, and open the dressing and topping bags, and mix them together. This gives me fresh vegetables with ease.

    Also bags/pots of microwave vegetables are great and if you want to be a bit unhealthy they taste better with grated cheese on top.

    Healthy eating fuels me to be the best version of myself but healthy eating can be so time-consuming and lots of prep. I've started to do 3 ingredient meals which have been great for getting me back to my health when I don't have the energy. I do like a mix it up salad also!
